Snow Peas & Avocado Spinach Salad

snow peas avocado spinach salad


  • 2 cups baby spinach leaves
  • 1 avocado
  • 50 g snow peas (mangetout)
  • ½ lime, juiced
  • ½ cup borage flowers (optional but recommended)


  1. Roughly chop the spinach.
  2. Dice the avocado.
  3. Top and tail the snow peas and chop into inch-sized pieces.
  4. Combine vegetables in a bowl, dress with the lime juice.
  5. Top with the borage flowers.
  6. Serve immediately or keep chilled for a day*.
